TALK - In transcriptions, I often see people using "--" or " - " when the original text uses "—". This is WRONG. If you can't type the em-dash easily, just grab it off of the Cosmic Arts article, that's what I always do. To be precise, though, "—" should be used whenever you want to use a dash in text, unless it is a compound word like "two-faced" or "one-eyed".

It's in the editbox, there's no reason why people shouldn't be using it.
