Since stinger attacks seem rare early on in the fight, a charge attack can be easily provoked and predicted. Equip a keyblade that is "difficult to deflect", such as the [[Olympia]] or the [[Three Wishes]]. Spam basic attacks against the pot scorpion, and you will notice a basic pattern in its melee attacks: it will do a quick one-two pincer attack, followed by a charge attack. The charge attack can be parried by a basic attack, but it is difficult to time correctly. If you stop attacking once you see the pincer attacks and use guard immediately after, you can deflect the charge attack and flip it over consistently, making it a fairly quick fight.
