It's likely it has been a week between KH2 and the epilogue to KH2 cause there is no way that Scrooge met Little Chef after he returned back to Disney Castle in KH2 or while he was selling Sea Salt Ice Cream in Hollow Bastion, on top of that the hole in the Tram Common (which was sealed off) and the Building which later becomes Le Grand Bistrot in KH3 don't happen in a span of a day or overnight.
