Knight's Shield is Goofy's original shield from the beginning of Kingdom Hearts and Kingdom Hearts II, its name is a reference to the fact that he is a trustful knight in Disney Castle.
As most of Goofy's weapons can be sold, this one cannot because it is his default weapon.
